Great wine with an intense ruby red colour, the bouquet is delicate, winy, and soft reminiscent of violet, wild berries, and a pleasant light vanilla taste. The grape pomace fermentation lasts approximately 18 days at a temperature of 22-25°C. The malolactic fermentation takes place in the barriques, small and rare oak barrels of 225 litres each coming from the Massif Centrale of France, where the wine stays for 18 months acquiring aromas and perfumes by osmosis, enhancing in this way its high prestige. The wine is then kept in bottles for a few months to refine its taste and perfume. At this stage the Barrique San Giovanni is ready to be tasted on our tables, where is excellent combined with all meat dishes. We recommend decanting the wine before serving for its optimal oxygenation.
